Pomelo Salad with Chilli Oil

This salad is super easy to put together and impresses your dinner guests. Although you'll find most Pomelo salads to be Thai flavoured, this classic salad is unique and delicious and will have you wanting seconds and thirds. 


- Full Pomelo, peeled and segmented
- 3 carrots, shredded
- 1/2 cup Pomegranate, segmented
- 1 spring onion, sliced
- Struggle Butt Chilli Oil
- 2 Tbsp Balsamic vinegar
- Struggle Butt Fried Garlic

In a bowl, add the pomelo, carrots, pomegranate and spring onions, gently mix and set aside while you get on with the dressing. 

For the dressing, mix together the balsamic vinegar and the chilli oil (as much or little as you'd like) and pour over the salad. 

Mix the salad and dressing together, sprinkle with Fried garlic and serve!
