Kimchi Omelette

Eat this for breakfast, lunch or dinner! If you've got leftover kimchi in the fridge and lack of motivation to cook, use this to fancy up a delicious meal! 

It's like any other omelette you've had but BETTER! It's spicy, savoury and has a delicious kick to it. 


  • 1/4 cup Struggle Butt Kimchi
  • 1 TBSP kimchi juice
  • 2 Eggs
  • Scallions, optional



Step 1. Drain the kimchi and chop kimchi into bite sized pieces and set aside

Step 2. Crack the eggs in a bowl and season with the 1 tbsp kimchi juice and salt and pepper. 

Step 3. In a non stick frying pan, add some butter or oil and cook the kimchi until heated through and then pour over the egg mixture. Place a lid on the pan and cook for 2-3 minutes on low heat until eggs are just set. 

Step 4. Once the eggs are cooked to your liking, garnish with scallions and enjoy with kimchi and a slice of toast!
