Kimchi Jjigae (Korean kimchi stew)


Ever wondering - How to use kimchi?


Here's a simple recipe to use Kimchi in a stew. Jjigae in Korean means stew and this Korean kimchi stew is healthy and delicious. It’s make with Kimchi and a handful of vegetables


Use meat, tofu, seafood as per your liking.

Ingredients

  • 200g kimchi, cut into pieces
  • 2 tablespoons Kimchi brine
  • 400g meat/ seafood/ vegetables of your choice
  • 1 green onion, sliced
  • 1 medium onion
  • 1 teaspoon Red chilli flakes
  • 1 tablespoon gochujang
  • 1 teaspoon sesame oil
  • 1 cup broth of your choice
  • Salt & sugar to taste
  • 1 Tofu brick
Directions
  1. Place the kimchi and kimchi juice into a shallow pot. 
  2. Add the meat, regular onion, chilli flakes, gochujang, and sesame oil into the pot and top with the broth.
  3. Cover and cook for 10 minutes over medium high heat. 
  4. Open the lid, stir and season with salt and sugar and lay the tofu on top. 
  5. Cover and cook for another 10 minutes over medium heat. 
  6. Uncover the pot, garnish with green onion and serve immediately with rice.
